# Ingredients:

→ Main Ingredients

01 - 1 tbsp sunflower oil
02 - 400 g steak, fat removed and cut into thin strips
03 - 300 g broccoli, or one whole head
04 - 160 g mange tout
05 - 250 g dried egg noodles

→ Sauce

06 - 1 tbsp fresh ginger, crushed or chopped
07 - 4 garlic cloves, peeled and crushed
08 - 5 tbsp oyster sauce
09 - 6 tbsp low-sodium dark soy sauce
10 - 6 tbsp honey
11 - 6 tbsp tomato ketchup

→ To serve

12 - 4 spring onions, trimmed and thinly sliced
13 - Sesame seeds

# Instructions:

01 - Combine the sauce ingredients in a small bowl and set aside.
02 - Place dried egg noodles in a bowl, pour boiling water over them, cover with a plate, and leave to soak while you cook the stir-fry.
03 - Heat sunflower oil in a large frying pan or wok. Add the steak strips and stir-fry over high heat for 4-5 minutes.
04 - Add broccoli and mange tout to the pan. Cook for an additional 4-5 minutes until slightly softened.
05 - Drain the noodles and add them to the pan. Pour the prepared sauce over the ingredients, stirring to coat everything evenly.
06 - Transfer the stir-fry to serving plates. Garnish with sliced spring onions and sesame seeds before serving.

# Notes:

01 - Cut the steak against the grain to ensure tenderness.
02 - For red meat alternatives, flank, sirloin, or rump steak work well.
03 - You can substitute with any vegetables available in the fridge; green vegetables pair best with beef.
04 - Use reduced-salt soy sauce or adjust quantities to reduce saltiness.
