Pineapple Fritter Rings (Print Version)

# Ingredients:

01 - 2 small fresh pineapples
02 - 1 cup all-purpose flour
03 - 2 tablespoons granulated sugar
04 - 1/2 teaspoon cinnamon
05 - 1/4 teaspoon nutmeg
06 - 1/4 teaspoon baking powder
07 - 1/4 teaspoon salt
08 - 1 large egg, beaten
09 - 1 1/4 cups low-fat buttermilk
10 - Splash of vanilla
11 - Vegetable oil, for frying

→ Cinnamon-Sugar Topping

12 - 1/3 cup granulated sugar
13 - 2 teaspoons cinnamon

# Instructions:

01 - Peel, core, and slice the pineapples into 1/4-inch thick rings. Pat dry and set aside.
02 - Line a baking sheet with paper towels and set aside.
03 - In a medium bowl, whisk together flour, sugar, cinnamon, nutmeg, baking powder, and salt. Add in the egg, buttermilk, and vanilla, stirring until just combined.
04 - Add about 5 centimeters of oil to a large heavy-bottomed pot set over medium heat. Heat oil until it reaches 175°C (350°F).
05 - Dip each pineapple ring into the batter, shaking off any excess.
06 - Carefully lower each battered pineapple ring into the oil. Fry 3-4 rings at a time for 1-2 minutes per side or until golden, ensuring they do not touch.
07 - Using tongs, transfer fried rings to the prepared baking sheet to drain excess oil.
08 - While still warm, dredge each ring in the cinnamon-sugar mixture.
09 - Repeat the frying and coating process with remaining pineapple slices. Serve and enjoy!
