01 -
Peel, core, and slice the pineapples into 1/4-inch thick rings. Pat dry and set aside.
02 -
Line a baking sheet with paper towels and set aside.
03 -
In a medium bowl, whisk together flour, sugar, cinnamon, nutmeg, baking powder, and salt. Add in the egg, buttermilk, and vanilla, stirring until just combined.
04 -
Add about 5 centimeters of oil to a large heavy-bottomed pot set over medium heat. Heat oil until it reaches 175°C (350°F).
05 -
Dip each pineapple ring into the batter, shaking off any excess.
06 -
Carefully lower each battered pineapple ring into the oil. Fry 3-4 rings at a time for 1-2 minutes per side or until golden, ensuring they do not touch.
07 -
Using tongs, transfer fried rings to the prepared baking sheet to drain excess oil.
08 -
While still warm, dredge each ring in the cinnamon-sugar mixture.
09 -
Repeat the frying and coating process with remaining pineapple slices. Serve and enjoy!
