Lemon Roasted Potatoes Side

5 large white potatoes, cut into wedges

1 cup water

⅓ cup extra virgin olive oil

½ cup lemon juice

3 cloves garlic, minced

2 ½ tsp dried oregano

1 tsp salt

1 tsp pepper
# Instructions:

Preheat oven to 325°F.

Spread potatoes in a greased 9×13 inch pan.

Add remaining ingredients to a bowl and whisk to combine. Pour evenly over potatoes.

Bake for 1 hour, turning once or twice during cooking. Serve hot.
