Wash the asparagus and break off the tough ends. Warm up your oven to 425°F, making sure both heat elements are on.

Roll out your puff pastry on a tray that’s covered in parchment. Use a pizza cutter if you’ve got one, and slice it into 8 squares.

Take each pastry square and slather a bit of herbed cream cheese on top. Lay down a gouda slice, then a ham slice. Set 2 or 3 asparagus spears across corners.

Fold each square over to form a triangle, pushing down on the edges so it sticks. Brush with egg and pop ‘em in the oven for about 25 minutes until they’re puffed up and golden.
