Wash and grate the zucchini and apple, then pat dry to remove excess moisture.

In a large mixing bowl, combine grated zucchini, grated apple, oat flour, rolled oats, egg, applesauce, ground flaxseed (if using), melted coconut oil, and a pinch of cinnamon. Mix well until evenly combined.

Place the dough on a flat surface lightly dusted with oat flour. Roll out to about ½-inch thickness. Cut the dough into chew stick shapes or use cookie cutters for fun designs.

Place the shaped chew sticks on the prepared baking sheet, leaving space between each. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown. For a crunchier texture, bake for an additional 5-10 minutes.
