Healthy Chicken Vegetables Skillet (Print Version)

# Ingredients:

→ Protein

01 - 2 tablespoons olive oil, keep divided
02 - 1 pound chicken breasts, boneless, skinless, chopped into bite-size pieces

→ Seasonings

03 - Salt and pepper, just enough
04 - ¼-½ teaspoon chili powder
05 - ½ teaspoon each: paprika, dried rosemary, dried thyme, onion powder, garlic powder

→ Vegetables

06 - 1 small yellow onion, sliced up
07 - 1 small red bell pepper, cut into chunks
08 - 1 small yellow bell pepper, chunked up
09 - 1 zucchini, halved and sliced
10 - 3 cups broccoli florets

→ Liquid and Garnish

11 - Fresh parsley, chopped for topping
12 - ¼ cup chicken broth, low sodium

# Instructions:

01 - Pour in broth. Toss chicken back in with veggies. Let everything warm up together. Parsley on top before serving.
02 - Put onions in the skillet for a couple of minutes. Stir in your other veggies and rest of the seasoning. Let them cook, still crisp, about 4 to 6 minutes.
03 - Pop chicken pieces into hot oil. Give it 6 to 8 minutes until they're cooked through, then move them to a plate.
04 - Chop chicken, sprinkle with half the mixed seasonings, then toss with some oil until coated.
