Line a large baking sheet with parchment paper and set aside.

In a large mixing bowl, use a handheld mixer to cream together the peanut butter and butter until well combined. Add the powdered sugar and vanilla extract (if using) and beat until fully incorporated, scraping down the sides of the bowl as needed.

Shape the mixture into tablespoon-sized balls and place them on the prepared baking sheet. Chill in the refrigerator for at least 20 minutes before serving or storing.
