Turn your oven to 350°F (175°C) and lightly coat a baking dish with butter or oil.

Combine 1 cup of flour, half the sugar, and the butter in a bowl. Mix until crumbly, press into the pan, and let it bake for about 15 minutes.

Take another bowl and beat together the eggs, the rest of the sugar, lemon zest, lemon juice, and the remaining flour until it’s all smooth.

Pour the lemon mix onto the warm crust, then bake it again for 20-25 minutes until it firms up.
