Garlic Butter Steak Bites (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 tablespoon olive oil
02 - 1/4 cup ghee or butter, split
03 - 1 pound Yukon gold potatoes, diced into half-inch pieces
04 - 1 1/4 pounds sirloin steak, chopped into half-inch cubes

→ Seasonings

05 - Fresh parsley, chopped for topping
06 - 1/4 teaspoon black pepper, plus more if needed
07 - 1/2 teaspoon sea salt, plus more if preferred
08 - 1/2 teaspoon dried oregano
09 - 1 teaspoon dried thyme
10 - 3 garlic cloves, finely chopped

# Instructions:

01 - Toss the potatoes back in and mix everything up. Taste again, add more seasoning if it needs it, and sprinkle some parsley on top to make it look good before serving.
02 - Turn the burner up a bit. Drop the rest of the ghee into the pan, then add steak pieces in. Season with some salt and pepper. Let the steak sizzle untouched for two minutes, then mix and keep going for another minute or two so it gets browned up and cooked through.
03 - Toss potatoes into the hot ghee. Sprinkle in garlic, thyme, oregano, salt, and pepper. Let them cook, stirring every minute or so for 8 to 10 minutes, till they’re soft inside and crispy outside. Set them aside out of the pan.
04 - Get a big cast iron skillet warm over medium heat. Add olive oil and half the ghee so it melts together.

# Notes:

01 - Other potatoes like red, yellow, or fingerling work too
02 - Chop potatoes small and try to keep them all the same size so they cook up fast
03 - Let the steak get a proper sear before moving it around
