Heat your oven to 375℉. Cover a big baking tray with parchment paper.

Throw the cottage cheese into a small food processor and blend it till it's silky smooth.

In a big bowl, combine the blended cottage cheese, flour, baking powder, salt, olive oil, spinach, and mozzarella. Mix it all together and shape the mixture into a chunky log about 6 inches long.

Break the dough into 6 even chunks. Flatten each chunk into a circle and poke a hole in the center with your finger.

Pop the formed dough rounds onto the baking tray. Brush them with the egg wash and bake for 22-25 minutes, or until the tops are beautifully golden.

Move the hot flagels onto a cooling rack. Let them cool down all the way before enjoying.
