Spinach Cottage Cheese Flagels (Print Version)

# Ingredients:

01 - 2 ounces baby spinach, finely chopped
02 - 1/2 teaspoon salt
03 - 1 egg, whisked lightly (for brushing)
04 - 1 tablespoon olive oil
05 - 3 teaspoons baking powder
06 - 1 cup cottage cheese
07 - 1/2 cup grated mozzarella cheese
08 - 1 cup plus 2 tablespoons plain flour

# Instructions:

01 - Heat your oven to 375℉. Cover a big baking tray with parchment paper.
02 - Throw the cottage cheese into a small food processor and blend it till it's silky smooth.
03 - In a big bowl, combine the blended cottage cheese, flour, baking powder, salt, olive oil, spinach, and mozzarella. Mix it all together and shape the mixture into a chunky log about 6 inches long.
04 - Break the dough into 6 even chunks. Flatten each chunk into a circle and poke a hole in the center with your finger.
05 - Pop the formed dough rounds onto the baking tray. Brush them with the egg wash and bake for 22-25 minutes, or until the tops are beautifully golden.
06 - Move the hot flagels onto a cooling rack. Let them cool down all the way before enjoying.

01 - Switch to gluten-free flour to make this work for those avoiding gluten.
