# Ingredients:

01 - 2 pounds beef chuck roast
02 - 1 onion, sliced
03 - 4 cloves garlic, minced
04 - 1 cup beef broth
05 - 1 cup French onion soup
06 - 1 tablespoon Worcestershire sauce
07 - 1 teaspoon dried thyme
08 - 1 teaspoon dried rosemary
09 - Salt and pepper, to taste

10 - 4 large hoagie or sub rolls
11 - 8 slices provolone cheese

→ Optional Garnish

12 - Fresh parsley, chopped

# Instructions:

01 - Heat a large skillet over medium-high heat. Season the beef chuck roast generously with salt and pepper. Once the pan is hot, sear the roast on all sides until browned (about 3-4 minutes per side). This step enhances flavor.
02 - Layer the sliced onions and minced garlic at the bottom of a slow cooker. This creates a flavorful base for the beef.
03 - Place the seared chuck roast on top of the onion and garlic layer in the slow cooker.
04 - In a bowl, mix the beef broth, French onion soup, Worcestershire sauce, thyme, and rosemary. Pour this mixture over the roast inside the slow cooker.
05 - Cover the slow cooker and cook on low heat for 8 hours or high heat for 4 hours, until the beef is tender and shreds easily with a fork.
06 - Remove the cooked roast from the slow cooker and place it on a cutting board. Use two forks to shred the meat into bite-sized pieces.
07 - Optional: Strain the juices in the slow cooker to remove onions and garlic for a clear au jus. Keep the au jus warm for serving.
08 - Slice the hoagie rolls and fill each roll with shredded beef. Top each sandwich with 2 slices of provolone cheese.
