Easy Sheet Pan Beef Quesadillas (Print Version)

# Ingredients:

→ Base Ingredients

01 - Flour tortillas (large burrito size) - 8
02 - Ground beef - 1 pound
03 - Black beans - 15 oz can, drained and rinsed
04 - Black olives - 2.25 oz can, sliced
05 - Colby and Monterey Jack cheese, shredded - 3 cups

→ Vegetables

06 - Bell pepper, seeded and diced - 1
07 - Yellow onion, diced - 1 small
08 - Green onions, sliced thin - 2

→ Seasonings

09 - Olive oil - 1½ tablespoons
10 - Chili powder - 1½ teaspoons
11 - Cumin - 1½ teaspoons
12 - Smoked paprika - 1½ teaspoons
13 - Minced garlic - 1 teaspoon
14 - Kosher salt - 1 teaspoon
15 - Black pepper - 1 teaspoon

→ Additional

16 - Salsa - ½ cup
17 - Sour cream for serving (optional)

# Instructions:

01 - Preheat oven to 425°F. Spray 18x13 sheet pan with cooking spray.
02 - Sauté bell peppers and onion in oil for 5 minutes. Add beef and garlic, cook until browned. Drain fat.
03 - Add seasonings, beans, olives, and salsa to meat mixture. Stir well.
04 - Arrange 6 tortillas around pan edges, 1 in center. Add meat mixture, cheese, green onions, and top tortilla.
05 - Fold edges in, cover with second pan. Bake 20 minutes, remove top pan, bake 5 more minutes.
