Italian Sausage Bean Soup (Print Version)

# Ingredients:

→ Meats

01 - Italian sausage - 1 pound
02 - Bacon - 4 strips

→ Vegetables

03 - Medium onion, chopped - ½
04 - Garlic cloves, minced - 3
05 - Carrots, peeled & chopped small - 2
06 - Fresh baby spinach - 2 cups packed

→ Other Ingredients

07 - Cannellini beans - 4 (14 oz) cans, drained
08 - Chicken broth - 4 cups
09 - Italian seasoning - ¼ teaspoon
10 - Dried rosemary - ¼ teaspoon
11 - Salt and pepper to taste

# Instructions:

01 - Cook sausage and bacon in large soup pot over medium-high heat until somewhat crispy, about 15 minutes. Remove to plate.
02 - Leave 2 tablespoons fat in pot. Sauté onion 3-5 minutes until softened. Add garlic, cook 30 seconds.
03 - Add beans, broth, and seasonings. Blend partially with immersion blender, leaving some beans whole.
04 - Return meats to pot, add carrots. Bring to boil, then simmer 15-20 minutes until carrots soften.
05 - Stir in spinach until wilted. Season with salt and pepper to taste.

01 - Can use ground sausage or remove from casings
02 - Can be made in Instant Pot
03 - Use low-sodium broth if salt sensitive
