Heat 1 tablespoon olive oil in a cast-iron skillet over medium heat. Slice sausage into coins and add to the skillet. Cook for 5 minutes on one side, then flip and cook for 3 minutes on the other side. Remove sausage to a large plate, leaving some oil in the skillet, and reserve any extra oil in a heat-proof bowl.

Add diced bell pepper to the skillet and cook for 4 minutes over medium heat. Add reserved oil as needed to prevent sticking. Remove bell pepper and place on the plate with the sausage.

Add sliced zucchini to the skillet and cook for 3 minutes over medium heat. Use reserved oil if necessary to prevent sticking.

Slice the cooked corn kernels off the cobs with a knife.

In the same skillet, combine sausage, bell pepper, zucchini, and corn kernels. Mix well and add reserved oil and chili powder. Reheat on low heat. Remove from heat and top with chopped cilantro.
