01 - 4 boneless, skinless grilled chicken thighs
02 - 6 pieces of crispy thick cut bacon
03 - 6 slices of tomato
04 - 2 cups shredded lettuce
05 - 1/2 cup shredded mozzarella cheese
06 - 4 toasted sub rolls

07 - 1/4 cup ranch dressing
08 - 1 teaspoon salt
09 - 1 teaspoon pepper
10 - 1 tablespoon all purpose bbq rub

# Instructions:

01 - Season chicken thighs with all purpose bbq rub and grill them at medium-high heat until they reach an internal temperature of 165°F.
02 - Cook the bacon in a skillet until crispy. Toast the sub rolls on the grill.
03 - On a cutting board, add a base layer of shredded lettuce, chicken, bacon, and tomato slices. Chop everything and ensure it is well mixed.
04 - Season with salt and pepper. Add mozzarella cheese and ranch dressing, then chop and mix again to incorporate.
05 - Scoop a portion of the chopped mixture onto each toasted sub roll and serve immediately.

01 - You can use leftover rotisserie chicken for a quicker preparation time.
