Effortless Lemon Truffles (Print Version)

# Ingredients:

→ Base

01 - Zest from one lemon
02 - 3 tablespoons powdered sugar or erythritol
03 - 2 tablespoons butter or swap for coconut butter
04 - 4 ounces cream cheese or coconut butter

→ Optional

05 - Drop of food coloring, natural, or a pinch of turmeric for color
06 - 3 ounces white chocolate chips

# Instructions:

01 - Toss everything in but the white chocolate and mix till it’s all creamy. Make sure your butter and cream cheese are soft first.
02 - Stick the mix in the freezer for a bit, then roll into balls or spread in a dish and slice later. Keep them in the freezer till they’re set.
03 - Want to cover them? Dunk in white chocolate melted with a little oil then let harden before slicing in half.
