Dry off the wings well. Mix up the seasonings, baking powder, and potato starch, then roll the wings in the mixture. Set your oven to 450°F while you do this.

Drop the oven temp down to 425°F. Arrange the wings on a parchment-lined tray you’ve spritzed with oil, making sure there’s space. Turn them over at the halfway point and let bake another 35-40 minutes.

In a small pan, toss in honey, all the lemon juice and zest, garlic, butter, pepper, and a pinch of salt. Warm everything 3-5 minutes. Stir so it becomes smooth and smells awesome.

Coat the cooked wings in the tangy honey lemon sauce, saving a little on the side so you can dip them if you want.
