Heat your oven to 425°F. Grab a 9x13 glass baking dish and give it a quick spray with cooking spray.

Arrange the frozen beef & cheese taquitos in a single layer covering the bottom of your baking dish.

Pour the enchilada sauce evenly over all the taquitos, making sure they're well coated. Scatter the diced green chilis over the top.

Sprinkle the shredded Colby jack cheese over everything and pop it in the oven for 20-25 minutes, until the cheese is melted and bubbling around the edges.

Let the dish rest for about 5 minutes after coming out of the oven. Sprinkle with the chopped fresh cilantro just before serving.
