# Instructions:

01 - Place the finely grated potatoes in a clean kitchen towel or cheesecloth and squeeze out any excess moisture to ensure crispier pancakes.
02 - In a large mixing bowl, combine the grated potatoes, grated onion, eggs, flour, and salt. Mix well until the ingredients are evenly combined. If the mixture is too wet, adjust by adding more flour until it reaches a thick, scoopable consistency.
03 - Heat a few tablespoons of neutral oil in a large skillet over medium heat until hot.
04 - Scoop spoonfuls of the potato mixture, flatten them into rounds in the skillet, and fry for 3-4 minutes on each side, or until golden brown and crispy.
