Heat a big pot of water and add a generous amount of salt. Once it’s boiling, toss in the spaghetti and follow the cooking time on the package. Before draining, save ½ cup of the water.

Warm the olive oil in a wide pan over medium heat. Stir in the garlic slices and cook for about 1-2 minutes until they turn golden. Sprinkle in the chili flakes and mix gently. Watch the garlic—don’t let it burn!

Put the drained spaghetti in the pan with the flavored oil and garlic. Toss it all together so the noodles are well-coated. Add a little starchy water if it feels too dry.

Sprinkle the chopped parsley on top, and if you like, add Parmesan. Give it a quick mix again and dish up right away.
