Heat your oven to 400°F (200°C). Give the russet potatoes a good wash and dry them completely. Cut each potato in half lengthwise, then slice each half into 3-4 wedges. Toss the wedges in a large bowl with the olive oil until they're all nicely coated.

Mix the salt, garlic powder, and Italian seasoning in a small bowl. Sprinkle this seasoning mix over the oiled potato wedges and toss everything together so they're evenly coated. Add the freshly shredded Parmesan cheese and toss again to coat all the wedges.

Line a baking sheet with parchment paper or give it a light coat of oil. Lay out all the potato wedges in a single layer with the skin side down. Pop them in the preheated oven for 25-35 minutes, flipping them halfway through cooking time. They're done when they're golden brown on the outside and tender on the inside.

Take them out of the oven, transfer to a serving plate, and sprinkle with some freshly chopped parsley. Serve them while they're still hot with your favorite dipping sauces on the side.
