Mix together soy sauce, olive oil, lemon juice, smoked paprika, garlic powder, onion powder, salt, and pepper in a big bowl. Toss in the chicken chunks. Let them soak up the flavors for at least a half hour or as long as 12 hours.

On medium heat, melt the butter in a small pot. Toss in the garlic and stir it around for a minute or two until it smells amazing. Add the cream and keep it simmering gently.

Sprinkle in the Parmesan and stir until it melts into a smooth, velvety sauce. Add mustard if you're using it. Sprinkle on some salt and pepper to suit your taste. Keep it warm until serving.

Preheat a grill or stovetop grill pan over medium heat. Lightly grease it with oil. Grill the chicken chunks for about 3–4 minutes on each side until they've got a nice char and are cooked all the way through.

Place the cooked chicken pieces on a platter. Pour the warm, creamy garlic sauce over the top. Sprinkle parsley on top, and serve it while it's hot.
