Pour enough frying oil (like canola) into a pan to make it 1 inch deep. Start heating it over medium heat while you whip up the batter.

In a bowl, stir together the flour, sugar, salt, and baking powder so everything’s mixed well.

Toss the egg, milk, vanilla, and water into the same bowl. Stir until it’s all smooth and lump-free.

Leave the batter alone for 5 minutes while the oil keeps warming up.

Scoop some batter with a dinner spoon and carefully slide it into the hot oil. Fry 5-7 pieces at a time, flipping after 15-30 seconds on one side, until both sides are golden brown.

Use a slotted spoon to take the fried pieces out. Put them on paper towels to soak up extra grease. Sprinkle on powdered sugar if you want, then eat while warm.
