In a medium bowl, stir the gelatin powder into the hot water until it fully dissolves.

Combine the dissolved gelatin, cream cheese, strawberries, cold water, and vanilla extract in a blender. Blend on high for about a minute, making sure it’s smooth and creamy.

Pour the blended mixture into a big bowl. Using a whisk, gently fold in the whipped topping till it’s well mixed and stays light.

Spoon the mousse evenly into four bowls or glasses. Chill in the fridge for a couple of hours until firm.

Right before serving, add extra whipped topping and strawberry slices on top, if you like.
