# Ingredients:

→ Dough

01 - 480 grams all-purpose or bread flour
02 - 1 teaspoon salt
03 - 1 large egg, room temperature
04 - 56 grams unsalted butter, melted, divided
05 - 60 milliliters honey
06 - 2.25 teaspoons active dry yeast
07 - 310 milliliters whole milk

# Instructions:

01 - Once those rolls are out and still hot, slather the last tablespoon of melted butter over them. Enjoy right away.
02 - Heat up your oven to 175°C. Slide in the rolls and bake for about 12 to 15 minutes. Pull them out when the tops are light golden and look tasty.
03 - Slice the dough into 24 pieces. Pop them onto two greased baking sheets, cover, and set aside for 30 to 40 minutes so they get puffy and double in size.
04 - Knock the air out of the dough and put it on some flour. Roll it to about 1.25 centimeters thick, fold in half, and press to keep it together.
05 - Move the dough into a bowl you’ve oiled, cover it with wrap, and let it chill in a toasty spot till it doubles—roughly one hour.
06 - Knead that dough right in the bowl or on a floured countertop for around 8 minutes, until it gets smooth and bouncy.
07 - Keep adding flour slowly, mixing as you go, till you have a dough that holds together well.
08 - Toss 3 tablespoons of melted butter, the milk-yeast mix, egg, salt, and half your flour in a big bowl. Use your hands or a dough hook and blend until it's all smooth.
09 - Mix the cooled milk, yeast, and honey in a small bowl. Give it a good stir and let it sit for 5 minutes while the yeast wakes up.
10 - Warm your milk just until it’s steamy with a few bubbles at the side. Take it off the heat and let it drop to about 27–32°C before going further.

01 - For better bread, check that your yeast is still kicking. Spoon your flour into the cup and level it off—using a scale works too and keeps things precise.
02 - If the dough isn’t puffing up much, try putting it somewhere warm. Popping it in a warm oven or near a steamy pan of hot water makes a big difference.
03 - Want a firmer bite? Go for bread flour. Like them soft? All-purpose is your friend. Both work well so don’t stress.
04 - If using instant yeast, lower the amount to 1.75 teaspoons and mix it straight in with the dry stuff. Easy switch.
