Feta Potatoes Baked (Print Version)

# Ingredients:

01 - 2 tbsp olive oil
02 - 1-2 big baking potatoes
03 - 1 tsp black pepper
04 - 200g block of feta cheese
05 - 1 head of garlic with the top sliced off
06 - 1 lemon, cut into four pieces
07 - 1 tsp dried oregano
08 - 1 tbsp honey
09 - 1/4 cup (20g) fresh basil leaves
10 - 1 tsp dried thyme
11 - 1 tsp salt

# Instructions:

01 - Turn on your oven and heat it up to 200C (390F).
02 - Rinse the potatoes, cut them into cubes, and place them in your baking tray.
03 - Sprinkle the potatoes with dried thyme, oregano, salt, and pepper. Pour 1 tbsp of olive oil on top and mix so everything is coated.
04 - Place the feta block in the center of your tray, turning it in the spices before leaving it face up. Add the garlic and a couple of lemon quarters to the tray, then pour on the leftover olive oil.
05 - Pop the tray into the oven and bake for 45-55 minutes. Take out the garlic after about 35 minutes if it looks like it's getting too dark. The potatoes should turn golden and crunchy.
06 - Push the roasted garlic cloves out of their skins and crush them with a sharp knife.
07 - Add the mashed garlic and squeeze the rest of the lemon over the potatoes. Toss in the fresh basil leaves, then carefully mix with the roasted feta.
08 - Drizzle the honey over everything and sprinkle on the shredded basil. Time to dig in!

# Notes:

01 - If your potatoes are still undercooked, take the feta out and leave the potatoes in the oven a bit longer. Keep an eye on the feta since it can turn chewy.
02 - Cutting the potatoes into smaller cubes can make them cook more evenly.
