Turn on your oven and heat it up to 200C (390F).

Rinse the potatoes, cut them into cubes, and place them in your baking tray.

Sprinkle the potatoes with dried thyme, oregano, salt, and pepper. Pour 1 tbsp of olive oil on top and mix so everything is coated.

Place the feta block in the center of your tray, turning it in the spices before leaving it face up. Add the garlic and a couple of lemon quarters to the tray, then pour on the leftover olive oil.

Pop the tray into the oven and bake for 45-55 minutes. Take out the garlic after about 35 minutes if it looks like it's getting too dark. The potatoes should turn golden and crunchy.

Push the roasted garlic cloves out of their skins and crush them with a sharp knife.

Add the mashed garlic and squeeze the rest of the lemon over the potatoes. Toss in the fresh basil leaves, then carefully mix with the roasted feta.

Drizzle the honey over everything and sprinkle on the shredded basil. Time to dig in!
