In a skillet, cook ground beef over medium heat until browned. Drain fat.

Add chopped onion and garlic; sauté until translucent, about 3–4 minutes.

Stir in cream of mushroom soup, sour cream, peas, and carrots. Season with salt and pepper. Simmer for 5 minutes.

Turn off heat and stir in 1 cup of shredded cheddar cheese.

Spread the beef mixture evenly in the baking dish. Arrange frozen tater tots in a single layer on top.
