Quick One Pot Pasta (Print Version)

# Ingredients:

→ Base Ingredients

01 - Linguine - 12 ounces
02 - Small onion, thinly sliced - 1
03 - Fire-roasted tomatoes, undrained - 14.5 ounces
04 - Fresh basil, roughly chopped - ½ cup, plus more for garnish
05 - Garlic, thinly sliced - 4 cloves

→ Seasonings and Liquid

06 - Lemon juice and zest - 1 lemon
07 - Olive oil - 2 tablespoons
08 - Salt - ½ tablespoon
09 - Pepper - ½ teaspoon
10 - Chicken stock - 4½ cups

→ For Finishing

11 - Parmesan cheese, shredded - 1 cup
12 - Fresh basil for garnish

# Instructions:

01 - Place pasta, onion, tomatoes, basil, garlic, lemon zest and juice in large skillet.
02 - Drizzle with olive oil, add salt and pepper.
03 - Pour chicken stock over everything.
04 - Bring to boil and cook 8-10 minutes, stirring frequently, until pasta is done and liquid reduces.
05 - Remove from heat, stir in parmesan. Let rest 5 minutes to thicken if desired. Garnish with basil.

01 - Use wide skillet for proper pasta length
02 - Avoid deep pots which prevent liquid reduction
03 - Can be made more al dente at 8 minutes
