Add egg white to empty shaker and shake vigorously 15 seconds until foamy. Gently spoon foam over martini.

Place egg-shaped stencil on foam surface. Dust lightly with cocoa powder through a fine-mesh sieve. Carefully lift stencil to reveal egg shape.
