Creamy Shrimp Dish (Print Version)

# Ingredients:

→ Shrimp

01 - 1/2 tsp paprika
02 - 1½ lbs peeled and cleaned shrimp
03 - 1/2 tsp salt
04 - 1/2 tsp blend of Italian herbs

→ Cooking Oil and Butter

05 - 1 tbsp extra virgin olive oil
06 - 1 tbsp unsalted butter

→ Vegetables and Aromatics

07 - 1 large handful of fresh spinach
08 - 5 oz sun-dried tomatoes, sliced after draining
09 - 5 garlic cloves, finely minced
10 - 1 small onion, chopped

→ Sauce

11 - Salt to your liking
12 - 1½ cups half and half
13 - 1/2 cup grated Parmesan cheese
14 - 1/2 cup dry white wine
15 - Pepper, as needed

# Instructions:

01 - Use a paper towel to dry the shrimp well. Sprinkle evenly with paprika, the herb mix, and salt.
02 - Heat olive oil and butter in a large pan over medium heat. Once hot, cook the shrimp for about 1-2 minutes on each side, then move them to a plate.
03 - In the same pan, sauté the chopped onion for 3-4 minutes on medium. Add the garlic and let it cook for 30 seconds. Drizzle in more oil if necessary.
04 - Stir in the sun-dried tomatoes and pour in the wine. Let it cook for a minute before adding the half and half, Parmesan cheese, and seasonings like salt and pepper. Simmer until it thickens, stirring now and then.
05 - Turn off the heat and mix the spinach and cooked shrimp into the sauce. Stir until the spinach wilts and the shrimp are covered in sauce.

# Notes:

01 - Half and half is equal parts milk and heavy cream. Heavy cream alone works too if preferred.
02 - Leftovers keep well in the fridge inside a sealed container.
03 - Pair this dish with steamed veggies, rice, orzo, or even mashed potatoes.
