Creamy Ranch Chicken Penne (Print Version)

# Ingredients:

→ Meats

01 - Smoked bacon, cut into ½-inch pieces - 6 slices
02 - Boneless skinless chicken breasts, cubed - 2 (about 1 pound)

→ Base Ingredients

03 - Yellow onion, chopped - ½ cup
04 - Penne pasta - ½ pound
05 - Chicken stock - 4 cups

→ Sauce Ingredients

06 - Ranch seasoning - 1 ounce
07 - Cream cheese - 6 ounces
08 - Cream of chicken soup - 10.5 ounces
09 - Colby jack cheese, shredded - 8 ounces (divided)

→ Seasonings

10 - Salt - ½ teaspoon
11 - Black pepper - ¼ teaspoon
12 - Fresh parsley, chopped - 2 tablespoons (divided)

# Instructions:

01 - Cook diced bacon until crispy. Reserve ¼ cup for garnish, leave 2 tablespoons grease in pan.
02 - Brown chicken and onions with seasonings 5-6 minutes. Add ranch seasoning and stock.
03 - Bring to boil, add pasta. Cover and cook on low 15-20 minutes until tender.
04 - Stir in cream cheese and soup until smooth. Add 1½ cups cheese, bacon, and half the parsley.
05 - Top with remaining cheese, cover until melted. Garnish with reserved bacon and parsley.

01 - Freezing bacon makes it easier to dice
02 - Pat frozen chicken dry before cooking
