Rich Chicken Broccoli Meal (Print Version)

# Ingredients:

→ Main Ingredients

01 - 16 ounces of broccoli florets, frozen and thawed
02 - 2 tablespoons of olive oil
03 - ½ teaspoon of salt
04 - ½ teaspoon of ground black pepper, split in half
05 - 2 pounds of chicken breasts, boneless and skinless, diced into 1-inch chunks

→ Sauce

06 - 1 cup of shredded cheddar cheese
07 - ½ cup of milk
08 - 2 cans of cream of chicken soup, each 10.5 ounces
09 - 1 teaspoon of garlic powder
10 - 1 tablespoon of fresh lemon juice
11 - 1 cup of regular sour cream
12 - 1 cup of mayo
13 - ½ teaspoon of onion powder

→ Topping

14 - 1 cup of plain-style breadcrumbs
15 - 2 tablespoons of melted butter, unsalted

# Instructions:

01 - Turn on your oven to 350°F. Grease up a 9x13 inch pan and set it aside for later.
02 - Warm some olive oil over medium-high heat in a big skillet. Toss in the chicken pieces, sprinkle with salt and half the pepper, then stir every so often until the chicken looks golden and cooked through—this should take about 8-10 minutes. Put the chicken aside when done.
03 - Follow the directions on the broccoli package to thaw it. Once ready, drain out extra liquid and gently pat it dry with paper towels.
04 - In a big bowl, combine sour cream, mayo, cheddar cheese, cream of chicken soup, garlic powder, milk, lemon juice, onion powder, and what’s left of the pepper. Stir until smooth.
05 - Add the broccoli and cooked chicken to the sauce-filled bowl. Gently fold them together so everything’s coated.
06 - Evenly spread the broccoli and chicken combo into your prepared baking pan.
07 - Stir the breadcrumbs and butter in a small bowl. Sprinkle that evenly across the top of your dish.
08 - Pop the pan in the oven for around 30 minutes. When the top turns golden and the edges are bubbling, take it out. Let it sit for about 5 minutes to cool a bit before serving.

01 - Swap the broccoli with green beans or peas if you'd like something different.
02 - Using rotisserie chicken can save you time if you're in a rush.
03 - For a healthier option, try substituting mayo with Greek yogurt or light mayo.
04 - Canned soup can be replaced with a homemade cream of chicken soup for fresher flavor.
