Quick Cranberry Orange Chicken (Print Version)

# Ingredients:

01 - Boneless skinless chicken breasts or thighs - 4
02 - Fresh cranberries - 1 cup
03 - Large orange, zested and juiced - 1
04 - Honey or maple syrup - 2 tablespoons
05 - Olive oil - 1 tablespoon
06 - Garlic cloves, minced - 2
07 - Fresh thyme or rosemary - 1 teaspoon (or ½ teaspoon dried)
08 - Salt and pepper to taste
09 - Chicken broth or water - ½ cup

→ Optional Ingredients

10 - Balsamic vinegar - 1 tablespoon
11 - Dijon mustard - 1 teaspoon

# Instructions:

01 - Season chicken with salt, pepper, and herbs. Optional: marinate for 30 minutes.
02 - Heat oil in large skillet over medium-high heat. Cook chicken 4-6 minutes per side until golden. Remove and set aside.
03 - In same skillet, sauté garlic 30 seconds. Add cranberries, orange juice, zest, and honey. Simmer 5-7 minutes until cranberries burst.
04 - Return chicken to skillet with sauce and broth. Cover and simmer 10-12 minutes until chicken reaches 165°F internally.
05 - Spoon sauce over chicken and garnish with fresh herbs or orange zest if desired.
