# Ingredients:

01 - 2 avocados, cut into slices after peeling and removing the pit
02 - 3 cooked ears of corn, kernels shaved off the cob
03 - 1/2 medium-sized red onion, sliced thinly
04 - 1 pound of cherry tomatoes, sliced in halves or quarters
05 - Approx. 1/4 cup of chopped cilantro, about half a small bunch

→ Dressing

06 - 2 to 3 tablespoons lime juice (use juice from 1-2 limes)
07 - 1/8 teaspoon ground black pepper
08 - 2 tablespoons top-quality extra virgin olive oil
09 - A teaspoon of sea salt or about 3/4 teaspoon table salt
10 - 2 garlic cloves, either finely chopped or put through a press

# Instructions:

01 - Grab a big salad bowl and toss in the tomato chunks, corn kernels, avocado slices, thin onion strips, and the cilantro bits.
02 - Pour olive oil and lime juice over everything, then mix in the minced garlic, salt, and pepper.
03 - Give it all a gentle toss until the mix looks well-blended.
04 - You can eat it right away as a side or chill it in the fridge until you're ready to dig in.
