Citrus Dijon Grilled Chicken (Print Version)

# Ingredients:

→ Chicken and Marinade

01 - 4 boneless skinless chicken breasts
02 - ½ cup olive oil
03 - 2 tablespoons dijon mustard
04 - juice of 1 lime
05 - juice of 1 lemon
06 - juice of 2 oranges
07 - 1 teaspoon salt
08 - 1 teaspoon garlic powder
09 - 1 teaspoon Italian seasoning or Herbs de Provence
10 - 1 teaspoon fresh thyme, finely chopped (or ¼ teaspoon dried thyme)
11 - 1 teaspoon fresh oregano, finely chopped (or ¼ teaspoon dried oregano)
12 - ¼ teaspoon crushed red pepper flakes

# Instructions:

01 - Combine all marinade ingredients and whisk vigorously to blend, or mix them in a jar, close the lid, and shake well. Reserve ¼ cup of the marinade for later use.
02 - In a bowl or large zip-close bag, combine the chicken and the marinade (excluding the reserved ¼ cup). Toss to coat thoroughly. Refrigerate for at least 1 hour, or up to overnight.
03 - Preheat the grill to medium heat and oil the grates to prevent sticking.
04 - Place the chicken on the preheated grill using tongs. Cook for 5-7 minutes, then turn and brush half of the reserved marinade onto the tops of the chicken.
05 - Cook for another 5-7 minutes, flip the chicken, and brush the remaining marinade over the top. Continue cooking for 2-4 more minutes or until the chicken is cooked through and juices run clear.
06 - Serve the chicken immediately. Garnish with fresh herbs, and lemon, lime, or orange wedges for squeezing over the top. Enjoy!

# Notes:

01 - Marinating the chicken for at least 1 hour delivers the best flavor, but 30 minutes will also work in a pinch.
02 - You can substitute more of one citrus if variety is unavailable. All lemon or lime works perfectly.
03 - Double the garlic powder and crushed red pepper flakes for an extra flavor boost!
04 - Herbs de Provence is a versatile ingredient that can substitute for Italian seasoning.
