Chili Garlic Spicy Eggs (Print Version)

# Ingredients:

01 - 1/3 cup mayo
02 - 12 big eggs
03 - 1 1/2 tablespoons chili garlic paste

→ For Garnish

04 - Crispy onions (fried)
05 - Paprika (smoked)

# Instructions:

01 - Put eggs in a pot, cover them with cool water, and bring to a boil. Turn down the heat and simmer for 10 minutes. Cool the eggs in ice water to peel them easily later.
02 - Carefully remove the shells from the eggs, then slice each egg lengthwise. Take out the yolks and set them aside in a bowl.
03 - Mush the yolks with mayo and chili garlic paste till smooth. If you’d like it spicier, add a little more chili garlic paste.
04 - Fill the hollowed egg whites by spooning or piping the yolk mix into them. To make them look fancy, try using a piping bag with a star tip.
05 - Dust the eggs with smoked paprika, top them with crispy onions, and serve right away or chill them until you’re ready to eat.

# Notes:

01 - Tweak the spiciness by adding more or less chili garlic paste based on what you like.
02 - Wait to add the fried onions until just before eating so they stay crunchy.
03 - You can make these up to a day ahead if you don’t add the crispy onions yet.
04 - A super smooth yolk mix pipes way easier, so make sure it’s lump-free.
