Chickpea Salad Feta (Print Version)

# Ingredients:

→ Dressing

01 - 1/8 teaspoon black pepper, or more if you like
02 - 1 garlic clove, finely chopped or crushed
03 - A pinch of sea salt, adjust as needed (about 1/2 teaspoon)
04 - 3 tablespoons freshly squeezed lemon juice (from a big lemon)
05 - 3 tablespoons of high-quality olive oil

→ Salad

06 - 4 ounces of diced feta cheese
07 - About 1/4 cup fresh cilantro, finely chopped
08 - One avocado, thinly sliced
09 - Half a medium red onion, sliced really thin
10 - 15 ounces of chickpeas, rinsed and drained well
11 - One English cucumber, sliced into half-moon pieces
12 - 1 1/2 cups of halved cherry tomatoes

# Instructions:

01 - Toss the olive oil, lemon juice, garlic, salt, and black pepper in a small jar or bowl. Either whisk until smooth or put the lid on the jar and shake it up until it’s blended.
02 - In a big serving bowl, toss together the cherry tomatoes, cucumber, chickpeas, red onion, avocado, cilantro, and feta until combined.
03 - Drizzle the prepared dressing evenly over the salad. Use a light hand to toss everything gently so the flavors mix together. You can use all the dressing for best flavor.
