Comforting Chicken Soup (Print Version)

# Ingredients:

01 - 1 medium onion, finely chopped
02 - 1 tablespoon of cooking oil, preferably olive
03 - Dice 2 carrots, medium-sized
04 - 5 garlic cloves, crushed or chopped
05 - Add 1 teaspoon of dried mint leaves
06 - 1/2 teaspoon of ground turmeric
07 - 1/2 teaspoon paprika powder
08 - Season with a pinch of salt and pepper
09 - Sauce uses 4 cups of chicken broth, no added salt
10 - Use florets from a single cauliflower head
11 - Two cooked chicken breasts, shredded
12 - Finish with a drizzle of olive oil and a lemon wedge garnish

# Instructions:

01 - Heat up your large pot over medium heat and pour in olive oil. Toss in chopped onion along with diced carrots and keep stirring for about 4 minutes. Add garlic and fresh ginger, cooking for just 30 seconds.
02 - Sprinkle in paprika, turmeric, the dried mint, plus some salt and pepper. Stir until everything's coated. Add the cauliflower florets and pour in the chicken broth. Cover the pot, bring it all to a rolling boil, then reduce the heat to keep it simmering. Let it cook around 7 minutes or until the cauliflower softens.
03 - Scoop out most of the cauliflower (around 80%) using a slotted spoon and blend it until creamy in texture. Pour that smooth puree back into the pot. Add the shredded chicken and stir things together. Taste and tweak the salt if needed.
