02 - 2 chicken breasts, boneless and skinless (roughly 1 pound total), cut into 1-inch chunks
03 - 1 tsp coarse salt
04 - Half a tsp of ground black pepper
05 - 1 tbsp olive oil (extra virgin is ideal)

→ Extras for Serving

06 - 1/2 cup of warm cowboy butter
07 - A dash of fresh parsley, finely chopped, for garnish

# Instructions:

01 - Let 8 wooden skewers soak in water for at least 30 minutes so they don't burn in the heat.
02 - Toss the chicken cubes with olive oil, salt, and pepper in a large bowl. Make sure everything is coated well.
03 - Thread 4–5 pieces of the chicken onto each soaked skewer, leaving space between pieces for better cooking.
04 - Set your air fryer to 400°F. Cook the skewers for 11-12 minutes, turning them over halfway through. Check that the internal temp of the chicken hits 165°F for safety.
05 - Place the cooked skewers on a plate, drizzle with warm cowboy butter, and sprinkle chopped parsley on top before serving.

# Notes:

01 - Using an oven? Roast the skewers at 400°F for around 20-25 minutes, flipping them midway.
02 - For grilling, cook them over medium-high heat for 8 to 10 minutes per side.
03 - Always ensure the chicken's internal temp is 165°F to be safe to eat.
