Chicken Meatballs in Alfredo Sauce (Print Version)

# Ingredients:

→ Meatballs

01 - Ground chicken - 1 pound
02 - Ricotta cheese - ½ cup
03 - Parmesan cheese, grated - ¼ cup
04 - Egg - 1
05 - Breadcrumbs - ½ cup
06 - Garlic cloves, minced - 2
07 - Italian seasoning - 1 tablespoon
08 - Salt and pepper to taste

→ Spinach Alfredo Sauce

09 - Butter - 2 tablespoons
10 - Garlic clove, minced - 1
11 - Heavy cream - 1 cup
12 - Parmesan cheese, grated - ½ cup
13 - Fresh spinach, chopped - 2 cups
14 - Salt and pepper to taste

→ For Serving

15 - Cooked pasta of choice

# Instructions:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - Mix ground chicken, ricotta, Parmesan, egg, breadcrumbs, garlic, seasonings. Shape into 1-inch meatballs and place on prepared baking sheet.
03 - Bake meatballs for 20-25 minutes until cooked through and lightly golden.
04 - Melt butter and sauté garlic. Add cream and Parmesan, simmer until thickened, about 5 minutes.
05 - Add spinach to sauce and cook until wilted. Season with salt and pepper. Serve meatballs over pasta with sauce.
