Chicken Corn Chowder (Print Version)

# Ingredients:

01 - 1 cup of whole milk or heavy cream
02 - 4 cups chicken broth, low-sodium preferred
03 - Salt and pepper as needed
04 - 3 minced garlic cloves
05 - 1 finely chopped onion, medium-sized
06 - 2 medium Yukon Gold potatoes, cut into small cubes
07 - 2 cups corn, frozen or fresh
08 - 4 chicken breasts, boneless and skinless (about 1.5 lbs)

# Instructions:

01 - Chop the onion and cube the potatoes. Mince the garlic cloves.
02 - Start with chicken at the base of the slow cooker. Layer on the garlic, corn, onion, and potato.
03 - Pour in the broth to just cover the ingredients. Stir in milk or cream for a richer flavor. Season lightly with salt and pepper.
04 - Cover with the lid. Cook everything on the low setting for 6 to 8 hours or high for 3 to 4 hours. The chicken should be tender when done.
05 - Pull apart the chicken with forks. Stir well to mix everything. Add fresh herbs for a nice garnish before eating.
