Throw salt and olive oil over the garlic, cover it up, bake in the oven at 400°F for 20 minutes. Once it's golden, smash it up and keep it aside.

Stir your smashed garlic with melted butter, the egg, milk, chopped parsley, and seasonings until nice and smooth.

Slice your bread rolls across and pop them in the oven at 350°F. Let them bake for 8-10 minutes so they get a little crispy.

Dunk each piece of toasted bread into the garlic butter custard so they're covered. Bake again at 350°F for 15-18 minutes until they've got a golden look.

Scatter mozzarella over the hot bread, put it under the broiler for about 5 minutes to get melty. Toss parsley and chili flakes on top when it's done.
