Perfect White Pizza Grilled Cheese (Print Version)

# Ingredients:

→ Cheeses

01 - 225 grams mozzarella, shredded up
02 - 30 grams Parmesan, grated fresh
03 - 120 grams either ricotta or cottage cheese

→ Flavorings

04 - 0.0625 teaspoon black pepper, ground
05 - 0.25 teaspoon salt
06 - 0.5 teaspoon dried oregano
07 - 1 teaspoon dried basil
08 - 1 clove garlic, chopped really small

→ Other Ingredients

09 - 28 grams butter, nice and soft (about 2 tablespoons)
10 - 10 to 14 slices sandwich bread
11 - 1 teaspoon olive or canola oil

# Instructions:

01 - Put your skillet on medium heat. Let those sandwiches get a golden crust on the first side. Flip them over, then keep going until both sides look great and the cheese is super gooey inside.
02 - Lay buttered bread slices face down in the skillet. Share out the cheesy mix on top, get it even. Use up the rest of the bread for the top layer, buttered side facing the sky.
03 - Make sure every slice of bread gets a good, soft spread of your butter on one side.
04 - Grab a big bowl. Mix your ricotta or cottage cheese with the oil first. Toss in the chopped garlic, dried basil, oregano, salt, black pepper, and all that Parmesan. Stir well, then add the shredded mozzarella last and gently fold it through.
05 - Got chunky cottage cheese? Quickly blend it up till it looks pretty smooth so your filling feels silkier.

01 - Want deeper flavor? Make the cheese blend early and pop it in the fridge for a few hours.
