Remove the leaves and trim the stem of the cauliflower, keeping the core intact. Slice it into ¾-inch thick steaks (2-3 full steaks, with smaller florets from the edges).

Place the cauliflower slices on the baking sheet. Brush both sides with olive oil and sprinkle with garlic powder, paprika, salt, and black pepper.

Bake for 20 minutes, flipping halfway, until golden and tender.

Sprinkle mozzarella, Parmesan, and Italian seasoning over the cauliflower. Return to the oven and bake for 5-7 minutes, until the cheese is melted and bubbly.
