Caribbean Meatloaf with Pineapple (Print Version)

# Ingredients:

01 - 2 lb ground beef
02 - 2 cups bread crumbs
03 - ⅔ cup barbecue sauce
04 - 2 large eggs, beaten
05 - 1 ½ tsp salt
06 - Dash of pepper
07 - 1 can sliced pineapple, 19 oz can, drained with syrup reserved for sauce
08 - Maraschino cherries for garnish

→ Sauce

09 - Reserved pineapple syrup
10 - 1 can water, 19 oz, use the pineapple can
11 - 1 tbsp cornstarch
12 - ½ cup barbecue sauce

# Instructions:

01 - Preheat oven to 350°F.
02 - In a large bowl, mix together ground beef, bread crumbs, barbecue sauce, eggs, salt, and pepper. Pack into a 9x5 inch loaf pan.
03 - Bake for 1 hour 5 minutes. Invert on a platter and cut into slices. Add a slice of pineapple between each slice of meatloaf. Insert a cherry inside each slice of pineapple.
04 - To make the sauce, add reserved pineapple syrup, water, and cornstarch to a pot and bring to a boil. Stir constantly. Turn down heat to medium and continue to cook until thickened. Stir in barbecue sauce.
05 - Pour sauce over meatloaf and serve.
