Turn the oven on to 350°F (175°C). Cover a baking tray with foil or parchment, then set a metal rack over it.

Spread the strips of bacon out flat on the rack, leaving some space between each slice.

In a small dish, stir together the brown sugar, maple syrup, black pepper, cayenne, and chili flakes until it forms a thick blend.

With a spoon or brush, spread the mixture generously over each piece of bacon so they're fully covered.

Pop the tray in your preheated oven and bake for 20-30 minutes, checking until your bacon’s crisp with a nice caramelized finish.
