Caprese Chicken and Potatoes (Print Version)

01 - 2 tablespoons olive oil
02 - 4 boneless, skinless chicken breasts
03 - 1 pound baby potatoes, halved
04 - 1 teaspoon garlic powder
05 - 1 teaspoon Italian seasoning
06 - Salt and pepper to taste
07 - 1 cup cherry tomatoes, halved
08 - 8 ounces fresh mozzarella, sliced
09 - 1/4 cup fresh basil leaves
10 - 2 tablespoons balsamic glaze

# Instructions:

01 - Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
02 - In a bowl, toss potatoes with 1 tablespoon olive oil, garlic powder, Italian seasoning, salt, and pepper. Spread on one side of the pan.
03 - Rub chicken breasts with remaining olive oil and season with salt and pepper. Place on the other side of the pan.
04 - Bake for 25-30 minutes, or until chicken is cooked through (165°F) and potatoes are golden and tender.
05 - Remove from oven, top each chicken breast with mozzarella slices and cherry tomatoes. Return to oven for 5 more minutes, or until cheese is melted.
06 - Garnish with fresh basil and drizzle with balsamic glaze before serving.

01 - Use a meat thermometer to ensure chicken is fully cooked.
02 - Substitute chicken thighs if preferred.
03 - Homemade balsamic reduction can be used instead of store-bought glaze.
