Butterscotch Haystacks Snack Treat (Print Version)

# Ingredients:

01 - 3/4 cup dry-roasted salted peanuts
02 - 11 ounces butterscotch chips
03 - 1/2 cup creamy peanut butter
04 - 1/4 teaspoon kosher salt
05 - 12 ounces fried chow mein noodles

# Instructions:

01 - Line 2 baking sheets with wax or parchment paper.
02 - Coarsely chop the peanuts.
03 - Place butterscotch chips, peanut butter, and salt in a large microwave-safe bowl.
04 - Microwave for 2 minutes, stirring halfway through. If needed, heat further in 20-second intervals until mostly melted.
05 - Stir in the chopped peanuts and chow mein noodles.
06 - Mix everything thoroughly until well combined.
07 - Scoop and drop by 2 heaping tablespoons onto the prepared baking sheets.
08 - Allow to sit for 40 minutes at room temperature or 20 minutes in the refrigerator until set.

# Notes:

01 - Do not use natural peanut butter.
02 - You can use a double boiler instead of a microwave.
03 - Makes approximately 36 haystacks.
04 - Store in an airtight container.
05 - Can be frozen for up to 3 months.
