Toss the sugar, milk, and butter into a saucepan. Warm it up, let it come to a boil, then keep it bubbling for 3 minutes before taking it off the heat.

Blend the vanilla, oats, coconut, and walnuts into the saucepan mixture. Pour everything into an 8-inch square pan coated with parchment. Smooth it out.

Pop it in the fridge to firm up. Once it's solid, slice it into squares.
