Brown Sugar Pop Tart Cookies (Print Version)

# Ingredients:

→ Cookie Dough

01 - 1 teaspoon kosher salt
02 - 1½ teaspoons baking powder
03 - 1 teaspoon baking soda
04 - 2 tablespoons cornstarch
05 - 3¾ cups cake flour
06 - 1 teaspoon vanilla extract
07 - 2 eggs, at room temp
08 - 1 cup light brown sugar, packed
09 - ½ cup regular sugar
10 - 1 cup unsalted butter, softened

→ Brown Sugar Filling

11 - 2 tablespoons cake flour
12 - 1 teaspoon cinnamon
13 - ¾ cup packed light brown sugar
14 - 5 tablespoons unsalted butter, at room temp

→ Brown Sugar Glaze

15 - 2½ tablespoons milk
16 - 3 tablespoons melted unsalted butter, cooled
17 - ½ teaspoon cinnamon
18 - 1 cup powdered sugar

# Instructions:

01 - Bake for 11–13 minutes at 350°F. Let 'em cool, then pour the glaze over top and spread it out.
02 - Break dough (about ¼ cup) in half, make a dent in one, pop in a filling ball, pinch shut, and roll gently.
03 - Stir all filling stuff until it's creamy. Scoop out 2 teaspoons at a time, roll each into a ball.
04 - Mix up your butter and sugars for a couple of minutes. Add in vanilla and eggs, give it a good mix till it's airy. Toss in your dry stuff. Stick the dough in the fridge for an hour.
